This is my go to dish when I don't have a lot of time or energy. It is really a comfort meal due to the addition of the cream, but you don't feel so bad eating it as it has both tomatoes and peas....so I guess vegetables trump the cream? Also feel free to swap the pasta for another like orzo. This is a great dish for kids too.....also something I guess since currently there are no kids in my house! Anyway enjoy!

Cook shallots and garlic chunks in olive oil |

Add a small can of diced tomato, you can use 3/4 of the can if you don't like a saucy pasta |

After the tomato cooks down add your peas (frozen organic work well) and cream |

Then add your cooked pasta to the tomato cream sauce, pasta should have flavor as you for sure salted the water! |

I grate up the parmigiano cheese into the whole dish before serving....a lot of it....meaning if you think it is too much keep going! |
